I just helped my buyers purchase a home that happens to be just a few blocks from Portland’s French American International School. Inspired by their French language immersion program, and the rainy cold weather we’ve been having, I’d like to share this delicious and classic recipe for French Onion Soup!
- 3 tablespoons butter
- 3 large onions, sliced
- 2 cloves of garlic, finely chopped
- 1/3c flour
- 3 cups beef broth
- 1/4c white wine
- 1 bay leaf
- 1 tsp thyme
- sliced baguette, and grated Gruyere for serving
Begin by cooking the onions in the butter in a deep pot on medium heat until they begin to caramelize. Lower the heat and stir occasionally for 25 min until the onions begin to caramelize and turn golden brown. Add the garlic and flour and continue to stir. Add the broth 1 cup at a time, then add the white wine and bring to a boil. Add the seasonings and simmer for 25 minutes. To serve, ladle the soup into oven proof bowls, top with baguette slices and cheese. Place under the oven broiler until cheese becomes bubbly.
